[要旨] 目的:本研究は植物での装飾が食卓印象および食欲と食事満足度にどのように影響するかを明らかにすることを目的とした。方法:成人健常者20人の各々に,植物なし,観葉植物あり,花ありの食卓で同じ内容の食事をしてもらい,食前の食欲(4項目VAS),食事前後の生理機能(心拍,自律神経活動),食後の食卓印象(22形容詞対7段階SD),食事満足度(6項目VAS)を測定した。結果を食卓の条件間で比較し,植物による装飾の影響を検討した。結果:花で食卓を装飾した場合,食欲の空腹感が有意に上がった(p< .05)。食卓印象は対照群に比べ,観葉植物介入群および花物介入が有意に高い値を示した。食事満足度は対照群に比べ,観葉植物介入群および花物介入群が有意に高い値を示した。心拍と副交感神経活動は3群の間に有意差はなかった。交感神経活動に関しては,花物介入群は介入後の安静5分,食後10分の時点に対照群より高い値を示した。また,食後10分の時点では,花物介入群は観葉植物介入群より有意に高かった。結論:何もない食卓より,観葉植物や花がある方がより好ましい食卓環境を提供できることが示された。特に観葉植物はリラックスする方向に働き,花は陽気で明るくなる方向に働くことが示唆された。食卓の植物は心拍と副交感神経活動に影響するほどではないが,花の装飾で食卓雰囲気が高揚することが示唆された。
[SUMMARY] Objective: The aim of this study was to determine the effects of plant decorations on table impressions, appetite and meal satisfaction. Methods: Three different interventions (table decoration with flowers or leaves, and control) were tested on the same 20 participants at meals. In each group, the following were examined: differences in appetite, table impression, meal satisfaction, heart rate, and autonomic nervous system activity, before and after the intervention. Results: In appetite, “hunger” increased significantly when the table was decorated with flowers. Table impression was significantly greater in the flowers group and leaves group compared to the control group. Meal satisfaction was significantly higher in both the leaves group and the flowers group than in the control group. There was no significant difference in heart rate or parasympathetic activity among the three groups. Regarding sympathetic activity, it was higher in the flowers group than the control group at 5 minutes of rest after the intervention and 10 minutes after the meal. Also, in the flowers group, it was significantly higher than in the leaves group at 10 minutes after the meal. Conclusions: Our results suggested the following: 1) a table with leaves or flowers can provide a more favorable dining ambiance than an unadorned table, 2) leaves in particular have a relaxing effect and flowers have a cheerful and uplifting effect, 3) flower decorations enhanced the dining atmosphere, though they did not affect heart rate or parasympathetic activity.
